Job Description

We are seeking a dedicated and detail-oriented Lab Assistant – Fruit Processing to join
our team. Reporting to the Laboratory Supervisor, the successful applicant will, among
other key duties, be responsible for:

Duties and Responsibilities

Key Responsibilities
• Conduct tests on raw fruit, intermediate products, and finished goods to
evaluate parameters such as pH, sugar content (Brix levels), acidity, moisture
content, and microbial activity. Monitor and analyse processing samples to
ensure they meet established quality standards.
• Prepare and test samples from various production stages (peeling, juicing,
pasteurisation, packaging).
• Maintain detailed records of all tests, inspections, and analyses.
• Assist in compiling reports on production quality and safety trends.
• Calibrate laboratory instruments, such as pH meters, refractometers, and
spectrophotometers, ensuring they function correctly and provide accurate
results.
• Ensure all laboratory equipment is clean and well-maintained, adhering to
company and regulatory standards.
• Follow standard operating procedures (SOPs) for lab tests and processes,
ensuring compliance with food safety standards.
• Maintain a clean and safe lab environment that complies with health and safety
regulations.
• Conduct routine checks for pesticide residues and microbial contamination in
raw materials.
• Collaborate with production staff to address quality-related issues that arise
during processing.

Qualifications and Experience

Minimum Qualifications & Experience
• Bachelor’s Degree in Food Science, Microbiology, Biochemistry, Chemistry, or a
related field.
• 5 “O” Levels including English Language and Mathematics.
• 2 years proven experience in dairy or food operations.
Attributes
• Strong attention to detail and accuracy in testing and record-keeping.
• Knowledge of dairy industry standards and testing methodologies.
• Familiarity with laboratory safety protocols and procedures.
• Good communication and teamwork skills
